Effects of Six Tastes on your body

According to Ayurveda, all foods are categorized into 6 tastes: sweet, sour, salty, pungent, bitter and astringent, which are required to be eaten to maintain good optimal health. Each of these six tastes has a significant role to play in the health of a person and it is good to have all of these tastes balanced in your diet.
SWEET
The sweet taste is consist of water and earth (Panchamahabhuta i.e Ether, Air, Fire, Water and Earth). It is highly nourishing and the most nourishing in all tastes. Sweet food nourishes our blood plasma, our tissue and soothes nerves. Examples of sweet foods are fruits, grains, sugars and milk.

SOUR
The sour taste is consist of water and fire. Sour food stimulates and boosts your digestion. Examples of sour foods are gooseberry, lemon, tamarind, wine and fermented products.

SALTY
The salty taste is consist of earth and fire. It provides solidity and structure to people, as well as grounding and it is also responsible for lubrication of tissues and activating digestive process. Examples of salty foods are sea salt, Himalayan salt, rock salt.

PUNGENT
The pungent taste is consist of fire and air. It stimulates our digestion, boosts food uptake and makes sure our waste products are burnt. Examples of pungent foods are chilli, pepper, garlic, ginger, cloves, and cinnamon.

BITTER
The bitter taste is consist of air and ether. Bitter food tones the organs, increases appetite and is detoxifying. Examples of Bitter foods are bitter gourd and all leafy vegetables, etc.

ASTRINGENT
The astringent taste is consist of fire and air. It reduces secretions, particularly sweating and it is also responsible for absorbing water, compresses tissues and dries out fat. In excess, it causes dryness and thirst. Examples of Astringent foods are cauliflower, cabbage, cucumber, etc.
